    The festival opens to visitors.

  2. Opening ceremony + taiko drums

    Japanese taiko drums kick off the first edition.

  3. Sushi show: nigiri from scratch

    A sushi master shows how perfect nigiri is made.

  4. Tuna five ways

    A guided tasting from akami to otoro.

  5. Tea ceremony

    A demonstration of the traditional sadō ceremony.

  6. Sushi masterclass

    A hands-on workshop — roll your own maki.

  7. Clash of the sushi masters

    Chefs head to head, against the clock and the palate.

  8. Calligraphy and origami

    Workshops in Japanese script and paper folding.

  9. Sake tasting

    A sommelier walks you through sake and Japanese whisky.

  10. Day one closes

    Day two begins.

  2. Maguro kaitai: tuna butchering

    A whole tuna broken down live on stage.

  3. Sushi for kids

    A children's workshop — a first maki, master supervised.

  4. Aikido demonstration

    Japanese martial arts, live.

  5. Rice: the heart of sushi

    A talk on why the rice matters more than the fish.

  6. Cosplay and J-pop

    A costume parade and Japanese music.

  7. Best sushi restaurant in the country announced

    The winner of the public vote takes the title.

  8. Closing concert

    We finish the festival with live music.
